City Chicken

Ingredients Part I:
Pork
(1 - 1 1/2 inch cubes)
Garlic (Cloves and/or powder)
Salt
  Combine and mix in container. Cover container and put in refrigerator. Store in refrigerator from 2-6 days, mix every day.
Ingredients Part II:
Breading   Take a paper bag and put flour in it. Pour evaporated milk in a bowl. Take another paper bag and put breadcrumbs in it.
Prepare:
    Put pork cubes, discard garlic, in bag with flour and shake until cubes are thoroughly coated. Then take floured cubes and mix in bowl of evaporated milk until thoroughly saturated. Then put cubes from milk into bag of breadcrumbs and shake until coated well. You can bread the cubes the day before and refrigerate them in the paper bag of breadcrumbs or if doing them the same day, let the beaded cubes stay in the bag of breadcrumbs for at least 30 minutes before deep frying.
  Cover a cookie sheet with aluminum foil and put cake cooling rakes on cookie sheet and bake in 350% oven until golden brown 45-60 minutes depending on size of cubes (dark brown is bad).
